Grilled Chicken and Tomato Salad

Ingredients
4 skinless and boneless chicken breast halves (6 oz each)
¼ teaspoon salt
¼ teaspoon ground black pepper
Cooking Spray
5 cups arugula
1 cup halved multicolored cherry tomatoes
¼ cup thinly sliced red onion
¼ cup olive oil and vinegar salad dressing, divided
10 chopped seedless kalamata olives
½ cup shredded goat's cheese

This salad recipe may seem ordinary, but you'll think differently when you taste fresh produce and flavorful goat's cheese in every bite.
Preheat a large grill pan over medium-high heat. Sprinkle the chicken with salt and pepper. Brush the mold with cooking spray. Add the chicken to the skillet; cook for 6 minutes on each side or until tender.While the chicken is cooking, combine the arugula, tomatoes, onion, 3 tablespoons of dressing, and olives; toss gently. Arrange about 1 cup of lettuce on each of the 4 plates; sprinkle each with 2 tablespoons of cheese. Brush the chicken with the remaining 1 tablespoon of the dressing. Cut the chicken into slices. Add 1 half chicken breast to each salad.
