Grilled Grouper Sandwiches with Tartar Sauce

Ingredients
4 fillets of sea bass (6 ounces each) (about 1 1/2 inches thick)
2 teaspoons olive oil
¼ teaspoon salt
¼ teaspoon ground black pepper
Cooking Spray
Tartare sauce
4 1.8 oz white wheat Burger buns
4 green lettuce leaves

Sea bass is a white meat fish that is well suited for grilling. If you can't find sea bass, use sea bass or mahimaha. Choose fish without stains, with a fresh smell and a flesh that springs when you touch it. Serve these fish sandwiches with fresh seasonal cherries and pineapple to add a vibrant color and tart flavor.Preparation: 6 minutes; Cook: 6 minutes
Cook on the grill.Brush the fillets evenly with olive oil; sprinkle evenly with salt and pepper. Place the fillets on a grill rack greased with cooking spray; cook for 3-4 minutes on each side, or until the fish flakes off easily when pricked with a fork.While the fish is cooking, prepare the Tartare sauce. Spread approximately 2 1/2 tablespoons of Tartare sauce on the cut sides of each bun; place 1 lettuce leaf on the bottom half of each bun. Arrange the lettuce leaves with the fish; top with the remaining bun halves.
