Grilled King Salmon with Tomato-Peach Salsa

Ingredients
1 cup sliced peeled peach
¾ cup cherry tomatoes, cut into quarters
¼ cup thinly sliced red onion
3 tablespoons small fresh mint leaves
3 tablespoons small fresh basil leaves
2 tablespoons fresh lemon juice
1 tablespoon extra virgin olive oil
1 tablespoon honey
1 thinly sliced jalapeno pepper (optional)
1 teaspoon kosher salt, divided
4 (6 oz) wild Alaskan king salmon fillet
¼ teaspoon freshly ground black pepper

To make
Use a freshly ripened peach so that it is juicy, but retains its shape. King salmon (also called chinook salmon) is of the highest quality and goes well with this dish, although sockeye salmon will also do.
Preheat the grill to high heat.Combine the first 8 ingredients in a bowl; add the jalapenos if desired. Sprinkle the mixture with 1/4 teaspoon of salt; mix gently. Sprinkle the fillets evenly with the remaining 3/4 teaspoon salt and black pepper. Place the fillets on a grill rack greased with cooking spray and cook for 10 minutes or until desired browning, turning after 5 minutes. Serve with salsa.
