Grilled Lamb Chops with Greek Salad

Ingredients
4 shoulder blades of lamb (about 2 pounds)
Salt and pepper
8 cups green salad dressing
1 cup cherry tomatoes, halved
½ cucumber, peeled and thinly sliced

¼ small red onion, thinly sliced
¼ cup olive oil
1 tablespoon lemon juice
3 ounces chopped feta
1 tablespoon finely chopped fresh oregano
To make
Preheat the gas grill on high power under the lid for 10 minutes, then reduce the heat to medium. Dry the lamb chops with paper towels and sprinkle generously with salt and pepper. Grill, turning once, until desired browning, just 8 to 10 minutes for a medium roast. Remove the chops from the grill, cover with foil and leave on a cutting board or plate for 5 minutes.While the lamb chops are cooking, combine the herbs, tomatoes, cucumber, olives, onion, oil, and lemon juice in a large bowl. Divide the salad into 4 plates. Place a chop on each plate, sprinkle the salad with cheese and oregano, and serve immediately.
