Grilled Lemon Chicken with Feta Rice

Ingredients
4 skinless and boneless chicken breast halves (6 oz each)
4 tablespoons fresh lemon juice, divided
1 tablespoon olive oil, divided
2 teaspoons minced garlic
Cooking Spray
½ teaspoon kosher salt, divided
½ teaspoon freshly ground black pepper, divided
2 bags (8 1/2 oz each) of pre-cooked brown rice (such as Uncle Ben)
3 ounces shredded feta cheese (about 3/4 cup)
½ cup chopped fresh basil
To make
A light lemon dressing and crumbs of salted feta turn packaged rice into an elegant side dish.
Combine the chicken, 2 tablespoons of lemon juice, 1 teaspoon of oil, and garlic in a zippered bag; flip to coat. Let stand for 5 minutes.Preheat a grill pan over medium-high heat. Brush the mold with cooking spray. Remove the chicken from the marinade and drain the marinade. Sprinkle the chicken with 1/4 teaspoon salt and 1/4 teaspoon black pepper; grill for 6 minutes on each side.While the chicken is cooking, reheat the rice according to the directions on the package. Combine the remaining 2 tablespoons of lemon juice and the remaining 2 teaspoons of butter in a bowl, stirring with a whisk. Add the rice, remaining 1/4 teaspoon salt, remaining 1/4 teaspoon pepper, feta, and basil; toss to combine. Serve rice with chicken.
