Grilled Mahi Mahi With Avocado-Chile Salsa

Ingredients
Salsa:
1 ripe avocado, cut into 1/4-to 1/2-inch thick slices
2 plum tomatoes, cut into 1/2-inch thick slices
1 cup chopped red onion
1 jalapeno or serrano chili pepper, peeled and minced
½ cup chopped fresh cilantro
1 lime, seasoned with juice
½ teaspoon kosher salt
Mahi mahi:
1 ½ pounds mahi-mahi, cut into 4 pieces
1 tablespoon extra virgin olive oil
1 lime, seasoned with juice
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper, to taste
To make
Preparation: 15 minutes; Bake: 12 minutes; Marinate: 20-30 minutes. This salsa can be served with any seafood, poultry or grilled meat. Choose the type of chili you use based on how much you like to fry. Serrano chili is hotter than jalapeno peppers; if you want more flavor, don't remove the seeds. Always wear gloves when handling hot peppers.
Combine all the ingredients in a large, reaction-free bowl (glass, stainless steel, or glazed ceramic) and mix gently with a spoon. Set aside. You can prepare this salsa a few hours before serving and store it in the refrigerator in a sealed container.Before grilling, marinate the fish with the other ingredients in a deep, reaction-free bowl (glass, stainless steel, or glazed ceramic) for 20 to 30 minutes.Roast over coals or on the grill, or bake in a roasting rack for 6-8 minutes on each side.Serve the fish with a sprinkle of salsa on top.
