Grilled Pork Chops with Herb Butter

Ingredients
4 tablespoons softened unsalted butter
1 tablespoon finely chopped fresh green onion
1 tablespoon finely chopped fresh parsley
½ teaspoon Dijon mustard
4 pork chops with bones in the center (2 pounds)

To make
In a small bowl, mash the butter, green onion, parsley and mustard with a fork until smooth. Cover with plastic wrap and let stand at room temperature while the pork chops are cooked.Preheat the gas grill on high power under the lid for 10 minutes, and then reduce the heat to medium. Dry the pork chops with paper towels and sprinkle generously with salt and pepper. Cook on the grill, turning once, until an instant-read thermometer inserted in the center of the meaty part of the chop (don't touch the bone) reads 145 ° F, just 12 to 14 minutes. Transfer the chops to a platter and sprinkle each with 1 tablespoon of herbed butter. Cover with foil to keep warm, let stand for 5 minutes, and then serve hot.
