Ingredients

1 tablespoon chopped fresh thyme
3 ½ teaspoons extra-virgin olive oil, divided
2 teaspoons minced garlic
4 6-ounce pork chops with a bone in the center (about 1/2 inch thick)
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Cooking Spray
2 ripe nectarines
½ teaspoon sugar
¼ teaspoon ground cumin
⅛ a teaspoon of ground red pepper
4 teaspoons mascarpone cheese

To make

This 30-minute dish of grilled pork chops with nectarines combines zest and sweetness.
Preheat the grill to medium-high heat.Combine thyme, 1 tablespoon oil, and garlic in a small bowl. Brush pork chops evenly with the butter mixture; sprinkle with salt and black pepper. Place the pork on a grill rack greased with cooking spray; cook for 3 minutes on each side or until desired browning degree. Let stand for 10 minutes.While the pork is steaming, cut the nectarines in half; remove the seeds. Combine the sugar, remaining 1/2 teaspoon oil, cumin, and red pepper in a small bowl. Sprinkle the sugar mixture evenly over the cut sides of the nectarines. Place the nectarines on a grill rack greased with cooking spray; saute for 5 minutes on each side or until tender. Slice the nectarines into slices; sprinkle the mascarpone cheese evenly on top. Serve with pork.
