Grilled Pork Chops with Shallot Butter

8 (7 oz) pork chops with a bone in the center, sliced
1 teaspoon salt, divided
¾ teaspoon freshly ground black pepper
2 tablespoons extra virgin olive oil
2 teaspoons finely chopped fresh green onions
1 teaspoon finely chopped fresh thyme
1 teaspoon finely chopped fresh rosemary
3 garlic cloves, minced
2 tablespoons softened butter
2 ½ teaspoons minced shallots
¼ teaspoon grated lemon zest

This reliable recipe for grilled pork chops is even more delicious thanks to the rich and savory butter seasoned with shallots and aromatic lemon zest. If you are cooking ahead of time, allow the butter to reach room temperature before spreading it on the pork. You can also mix the oil and herbs that were smeared on the grilled pork chops a couple of hours before cooking.
Cook the grill over medium-high heat.Sprinkle the pork evenly on both sides with 1/2 teaspoon salt and pepper. Combine the oil, green onion, thyme, rosemary and garlic, stirring well. Rub the butter mixture evenly over both sides of the pork. Place the pork on the grill rack; cook for 6 minutes on each side, or until the thermometer set in the thickest part of the pork reads 155 °. Remove the pork from the grill; let stand for 5 minutes. Sprinkle with the remaining 1/2 teaspoon salt.Combine the butter, shallots, and lemon zest, mixing well. Spread about 1 teaspoon of the cream mixture on each pork chop; let the pork sit for another 5 minutes.
