Grilled Shrimp Tostadas with Lime

Ingredients

Shrimp:
24 large shrimp, peeled and boned (about 1/2 pound)
½ teaspoon garlic powder
½ teaspoon ground cumin
¼ teaspoon kosher salt
Black Bean salsa:
¼ cup chopped green onion
¼ cup chopped cilantro
1 tablespoon olive oil
1 tablespoon red wine vinegar
1 tablespoon chopped chipotle chili in adobo sauce
1 teaspoon minced fresh garlic
¼ teaspoon kosher salt
1 can unsalted black beans (15 oz), rinsed and dried
Avocado topping:
¼ cup plain low-fat Greek yogurt
1 teaspoon lime juice
1 ripe peeled avocado
1 cup chopped seedless tomatoes
Cooking Spray
8 corn tostadas
4 lime wedges

To make

Grill your prawns and enjoy a delicious Mexican dish with a twist.
To make the prawns, combine the prawns, garlic powder, cumin, and 1/4 teaspoon salt in a bowl. Let stand for 10 minutes.To make the black bean salsa, combine the green onions and the following 7 ingredients (via the beans) in a medium bowl; stir to coat.To make the avocado filling, combine the yogurt, juice, and avocado in a small bowl and mash with a fork until smooth. Add tomatoes.Preheat a grill pan over medium-high heat. Brush the mold with cooking spray. Add the shrimp to the pan; saute for 2 minutes on each side. Top each tostada with 1/4 cup of the bean mixture, 3 shrimp, and 1 tablespoon of the avocado mixture. Serve with lime wedges.
