Grilled White Pizza with Clams and Bacon

Ingredients
12 ounces peeled clams, coarsely chopped
3 garlic cloves, minced
¼ teaspoon dry ground red pepper flakes
3 ½ teaspoons extra-virgin olive oil, plus more for greasing
3 ½ teaspoons fresh lemon juice, divided
3 tablespoons semolina or polenta
1 pound chilled pizza dough, room temperature
8 oz grated mozzarella cheese (about 2 cups)
2 ounces grated Parmigiano Reggiano cheese (about 1/2 cup)
4 slices of apple-smoked bacon, minced
1 cup fresh flat parsley leaves
⅛ a teaspoon of kosher salt
To make
Preheat the grill to medium-high heat (350 ° to 400 °). Combine the first 3 ingredients, 1 tablespoon of oil, and 1 tablespoon of lemon juice in a small bowl. Let stand for 15 minutes.Sprinkle semolina evenly on a large baking sheet without sides. Place the pizza dough on a baking sheet and roll out in a 14-inch circle.Brush the grill rack with oil and place the pizza dough on it. Cook on the grill, covered, for 2 minutes or until grill marks appear. Place the baking sheet under the dough on a wire rack and reduce the heat to medium. Sprinkle the mozzarella batter evenly, leaving a 3/4-inch-thick rim. Top with the clam mixture, parmesan reggiano and bacon. Cook on the grill, covered, for 8 minutes or until the cheese is melted and the crust is lightly browned.Meanwhile, combine the parsley, salt, and remaining 1/2 teaspoon oil and lemon juice in a small bowl. Remove the pizza from the grill and sprinkle the parsley mixture on top. Serve immediately.
