Halibut with Charred Tomatoes and Dill

Ingredients

4 halibut fillets (6 oz.) without skin
½ teaspoon salt, divided
¼ teaspoon freshly ground black pepper
2 tablespoons butter
½ cup dry white wine
1 ½ cups cherry tomatoes, pears, or grapes
1 teaspoon olive oil
1 tablespoon chopped fresh dill
Oregano leaves (optional)

Who would have believed that it only takes 12 minutes to prepare this elegant dish? For the most beautiful look, choose small tomatoes of different colors. If you have some purple-colored oregano, make sure to use it here.
Preheat a large skillet over medium-high heat. Sprinkle the fish with 1/4 teaspoon of salt and pepper. Add the butter to the skillet; beat until the butter melts. Add the fish; cook for 1 minute. Add the wine; cover, reduce the heat to medium-low, and cook for 7 minutes or until the fish flakes easily when pricked with a fork.Preheat a small skillet over high heat. Mix tomatoes and butter. Add to the pan; cook for 3 minutes or until lightly browned and beginning to soften.Place 1 fillet in each of the 4 shallow bowls; spread the cooking liquid evenly over the fillets. Divide the tomatoes into portions. Sprinkle with 1/4 teaspoon salt and dill. Garnish with oregano if desired.
