Hoisin Pork in Lettuce Cups

Ingredients
2 ½ pounds boneless pork shoulder, trimmed, cut into 2-inch pieces
¼ cup low-sodium soy sauce
1 tablespoon packed dark brown sugar
1 tablespoon grated fresh ginger
2 tablespoons garlic chili sauce
2 tablespoons hoisin sauce
1 carrot, minced
¼ cup finely chopped fresh cilantro
3 parts green onion, white and light green, finely chopped
24 large lettuce leaves

To prepare an easy and pleasant dinner for everyone, try hoisin pork in lettuce leaves — a delicious recipe for cooking in a slow cooker.
In a slow cooker, combine the pork with soy sauce, brown sugar, ginger, and 1 tablespoon garlic chili sauce. Cover and cook over low heat until tender, about 6 hours.In a bowl, combine the remaining 1 tbsp garlic chili sauce, hoisin, carrots, coriander, and green onions. Use a slotted spoon to transfer the pork to a bowl; mix well. Add a few tablespoons of cooking liquid to moisten the pork mixture if desired. Spoon over lettuce leaves and serve.
