Honey Shrimp Skewers

Ingredients
½ cup soy sauce
⅓ cup of honey
¼ cup fresh lemon juice
3 tablespoons olive oil
2 garlic cloves, minced
¼ teaspoon dry ground red pepper flakes
¼ teaspoon ground black pepper
12 slices (6 oz) prosciutto, halved lengthwise
1 pound (about 24) large shrimp
24 slices of nectarine or pineapple
Garnish: chopped green onions, sesame seeds
To make
Combine the first 7 ingredients in a large bowl.Wrap each shrimp in 1 piece of prosciutto. Arrange shrimp and nectarines alternately on 8-inch skewers. Place the skewers on a shallow plate; drizzle with 1/2 cup soy sauce mixture, turning to coat. Cover and refrigerate for 30 minutes.Preheat the grill to medium-high heat (350 ° to 400 °). Remove the skewers from the marinade; drain the marinade. Grill the shish kebab for 3 minutes on each side or until the shrimp is opaque. Serve with the remaining soy sauce mixture. Decorate if desired.
