Ingredients
½ cup unsweetened coconut flakes
½ cup raw long-grain white rice
2 cups boiling water
2 cups rice milk
⅔ cup sugar
½ teaspoon vanilla extract
¼ teaspoon ground cinnamon

This typically sweet drink may be too sweet for some tastes. Feel free to add sugar back up to 1/2 or 1/3 cup.
Combine coconut flakes and rice in a blender. Pour in 2 cups of boiling water; let stand for 15 minutes. Beat for 1 minute or until smooth. Strain the mixture through a fine sieve or cheesecloth into a jug, wringing out the mixture with the back of a spoon to remove as much liquid as possible. Avoid dry substances. Add the remaining ingredients, stirring occasionally, until the sugar is dissolved. Serve with ice.
