1 ½ cups blanched almonds
1 cup dried blueberries
¾ cup Medjool seedless dates
¾ cup odorless egg white
1 tablespoon lemon zest plus juice of 1 fresh lemon (from 2 lemons), divided
3 tablespoons water
1 ½ cups medjul dates, pitted
1 cup blanched almonds
¾ cup pumpkin seed kernels (pepitas)
¾ cup odorless egg white
¼ cup cocoa beans
2 teaspoons espresso powder (such as Illy)
½ teaspoon ground cinnamon
¼ teaspoon cayenne pepper
4 tablespoons water

We've made RxBars poetic before. I bet that at least one of your friends always has RXBARS in their bag, packed with protein, fat, and natural sugars. As much as we love the packaged version of the energy bar, it turns out that making it yourself isn't difficult at all. Not only do you get complete control over the taste of DIY energy bars, they also won't cover your teeth with the sticky coating we've come to expect from the store-bought version. You probably already have everything you need to make your own candy bars (OK, maybe not egg white powder, but it's easy to find on the internet. And PS: if you don't eat eggs, you can use whey or vegetable protein powder.) Grind almonds, dates, and protein powder, then move on to flavoring: dried fruits, warming spices, maybe a handful of cocoa beans or crushed chocolate. Squeeze the mixture into a large rectangle, then cut the bars into individual sizes.Rxbars Copycat
Combine almonds, blueberries, dates, protein powder, and zest in a food processor. Whisk until smooth. With the food processor turned on, add water and lemon juice.
