(Not that I've done this before or anything.)Cinnamon rolls are easy to find, but if you want to make them yourself, here's the problem: they can cause a lot of trouble. Yeast? Batch? Real baked goods? Ugh, the horror. This is why cinnamon pancakes can save your morning / day / life.Pancake batter does not require the dough itself. You can even use ready-made pancakes. There is no judgment here. It's all about adding a buttery cinnamon filling to each pancake. Extra points for making curls. The most delicious thing is when the cinnamon butter melts. They will literally soak into your pancake, giving it a flavor. And in true frankenfood style, they are also decorated with cream cheese frosting. Who's with maple syrup?Pancakes with cinnamon rolls
Whisk together the melted butter, brown sugar, and cinnamon. Refrigerate for 10 minutes.Prepare the batter for pancakes. Grease a baking sheet.Put the cooled butter and cinnamon mixture in a small plastic bag. Cut a corner to make a makeshift pastry bag.Over medium heat, add a spoonful of pancake batter.As soon as bubbles begin to form, squeeze the cinnamon onto the pancake. Some of the pancakes may melt, but don't panic. It will just turn into a pancake.Flip and cook as usual. Repeat with the rest of the dough.Heat the remaining butter (4 tablespoons) and cream cheese in the microwave. Approximately 45 seconds should be enough, but keep an eye on it. You can also cook it in a saucepan over medium heat.Once they are melted, add the vanilla extract and powdered sugar.Sprinkle each pancake on top. Serve warm.
