Italian Egg Rolls

Ingredients
½ cup chopped onion
½ cup chopped green pepper
2 teaspoons butter
1 pound sweet or spicy italian pork sausage
2 pieces of 10 oz. pkgs. frozen spinach, thawed and dried
½ cup grated parmesan cheese
3 cups grated mozzarella cheese
½ teaspoon garlic powder
1 14-oz egg roll wrappers
olive oil for deep frying
Garnish: warmed pizza sauce
To make
Traditional egg rolls can be prepared according to an Italian recipe. Don't forget to pour warm dipping sauce over your pizza!
In a skillet over medium heat, saute the onion and green pepper in the oil. Transfer to a medium bowl and set aside. Saute the sausages in a frying pan; drain and mix with the onion mixture. Add spinach, cheese and garlic powder; mix well. Brush each egg roll wrapper with 3 tablespoons of the mixture; roll up as directed on the egg roll wrapper. Heat 3-4 cm of oil in a deep fryer. Add the egg rolls several times at a time, sauteing until golden brown. Dry on paper towels. Serve warm with dipping pizza sauce.
