Jamaican Coconut Bread

Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
½ teaspoon grated nutmeg
½ teaspoon ground cinnamon
¼ cup raisins
½ cup brown sugar
1 ¼ cups grated coconut
1 cup of water
1 large egg
4 ounces melted butter

This bread is very moist and dense, almost like pudding. Serve it warm or toasted, sprinkled with vanilla ice cream or a spoonful of fresh cream. To add flavor, soak the raisins overnight in rum. Cooking time: 10 minutes, baking time: 35 minutes.
Preheat the oven to 350 degrees.Combine the first 7 ingredients in a large bowl. Grind the coconut chips and water in a food processor or blender to a fine grater; add the egg and mix. Combine the coconut mixture and butter with the flour mixture until smooth. Place in a lightly greased 9-inch x 5-inch baking dish lined with parchment paper. Bake at 350 ° C for 40-45 minutes or until a wooden stick inserted in the center comes out clean. Cool in the pan for 10 minutes on a wire rack; remove the bread from the pan. Cool completely on a wire rack.
