Lemon Curd Glaze

Ingredients
⅔ cup sugar
1 ½ tablespoons melted butter
2 teaspoons lemon zest
2 tablespoons fresh lemon juice
1 large egg, lightly beaten
To make
Combine the first 4 ingredients in a small heavy saucepan; add the egg and mix until smooth. Cook over low heat, stirring constantly, for 10-12 minutes or until the mixture thickens slightly and begins to bubble around the edges. (The prepared mixture will be similar in density to heavy cream.) Use immediately.Try this curd cake! Lime curd frosting: Replace the lime zest with lemon zest and the lime juice with lemon juice.
