Lemon-Thyme Simple Syrup

¾ cup sugar
4 (4-inch) thyme sprigs
4 lemon slices

Use this sweet herb cocktail syrup in our lemon-thyme Pimm's Cooler (it goes well with the pleasant bitterness of the drink). If you prefer mocktail, try soda syrup.
Combine sugar, 3/4 cup water, thyme and lemon in a small saucepan. Bring to a boil over medium-high heat. When the first bubbles appear, reduce the heat to medium-low and simmer for 5 minutes. Allow to cool, then strain. It is stored chilled for up to 1 week.Note: Nutritional analysis is given on a tablespoon.
