Lentil Salad with Feta Cheese

Ingredients
1 ¼ cups dried lentils
3 tablespoons fresh lemon juice
1 ½ tablespoons olive oil
½ teaspoon dried thyme
¼ teaspoon salt
⅛ a teaspoon of coarsely ground pepper
1 minced garlic clove
1 ½ cups quartered cherry tomatoes
1 cup diced cucumbers
½ cup (2 oz) shredded feta cheese
⅓ cup thinly sliced celery

This hearty lentil salad can be served with a bright lemon dressing. The main ingredients, such as celery and feta cheese, add a great texture to the salad to the main course.
Put the lentils in a large saucepan; cover with water 2 inches above the lentil level and bring to a boil. Cover, reduce heat and simmer for 20 minutes or until tender. Dry well and set aside.Combine the lemon juice and the following 5 ingredients (lemon juice with garlic) in a medium bowl; whisk until smooth. Add the lentils, tomatoes, cucumber, cheese, and celery to the lemon juice mixture; mix gently to coat. If desired, serve on plates lined with lettuce leaves.
