Lentil Stew with Ham and Greens

Ingredients
1 ½ tablespoons olive oil
1 cup chopped onion
3 garlic cloves, minced
5 cups low-sodium, fat-free chicken broth
1 cup dried lentils
½ cup chopped carrots
2 bay leaves
3 cups chopped Swiss chard, kale or spinach
1 ½ cups chopped baked potatoes
1 cup chopped smoked ham
1 can diced tomatoes (14.5 oz), drained
1 teaspoon dried basil
½ teaspoon dried thyme
½ teaspoon ground black pepper
3 tablespoons chopped fresh parsley

One of the best things about this dinner, aside from its great taste, is that it can be ready in less than an hour from start to finish.
Heat the oil in a roasting pan over medium-high heat. Add the onion and garlic; simmer for 5 minutes. Add broth, lentils, carrots, and bay leaves; bring to a boil. Partially cover, reduce heat and simmer for 20 minutes. Add the chard, potatoes and ham; bring to a boil. Reduce heat; simmer 15 minutes or until potatoes are tender. Add tomatoes, basil, thyme and pepper; simmer for 10 minutes. Discard the bay leaves. Sprinkle with parsley.
