½ pound lean ground beef
½ cup chopped onion
1 tablespoon minced fresh garlic

For picky foodies, try serving this light meat sauce with whimsically shaped pasta dishes like bow ties, rotinis, or van wheels.
Prepare the pasta according to the instructions on the package, without adding salt or fat. Drain the water. While the pasta is cooking, preheat a large skillet over medium-high heat. Add the beef, onion, garlic, oregano, and salt; cook for 5 minutes or until the beef is browned, stirring until it crumbles. Add the tomato paste; cook for 1 minute, stirring frequently. Add tomatoes. Bring to a boil; cook for 1 minute. Reduce heat to medium-low; cook for 3 minutes or until thickened. Serve with pasta, sprinkled with cheese and parsley.
