Linguine with Two-Cheese Sauce

Ingredients

8 oz raw linguine
1 cup 1% low-fat milk
2 tablespoons chopped fresh basil, divided
½ teaspoon salt
⅛ a teaspoon of freshly ground black pepper
1 tablespoon extra virgin olive oil
1 tablespoon all-purpose flour
½ cup (2 oz) chopped fresh Parmigiano Reggiano cheese, divided
1 ½ tablespoons mascarpone cheese

To make


Prepare the pasta according to the instructions on the package, without adding salt or fat. Drain; keep warm.While the pasta is cooking, combine the milk, 2 teaspoons of basil, salt and pepper in a bowl; stir in the milk mixture with a whisk.Heat a small saucepan over medium-high heat. Pour the oil into the pan; stir to coat. Add the flour to the pan and cook for 2 minutes, stirring constantly. Add the milk mixture; cook for 3 minutes or until slightly thickened, stirring frequently. Remove from the heat and add 1 1/2 ounces of Parmigiano Reggiano and mascarpone cheese to the milk mixture. Add the cheese mixture to the pasta; stir until smooth. Sprinkle with the remaining 4 teaspoons of basil and the remaining 1/2 ounce of parmesan reggiano.
