Maple Grilled Salmon

Ingredients
¼ cup rice wine vinegar
3 tablespoons maple syrup
2 tablespoons fresh orange juice
4 salmon fillets (6 oz.) without skin
Cooking Spray
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
To make
The sweet and sour marinade turns into a syrupy glaze, which is covered with salmon as it cooks. Citrus and maple flavors will also be delicious with pork. If desired, garnish the fillet with orange slices.
Combine the first 3 ingredients in a large zippered plastic bag; add the fish. Cover and marinate in the refrigerator for 3 hours.Preheat the grill or grill pan to medium-high heat.Remove the fish from the bag, reserving the marinade. Pour the marinade into a small saucepan; bring to a boil. Cook until reduced to 2 tablespoons (about 5 minutes).Place the fish on a grill rack or griddle greased with cooking spray; grill for 4 minutes on each side, or until the fish flakes easily when tested with a fork, or until the desired degree of roasting is achieved, drizzling the marinade occasionally. Remove the fish from the grill; sprinkle with salt and pepper.
