Ingredients
3 large cucumbers peeled and cut into 1/4-inch thick slices
3 ripe tomatoes, sliced
1 vidalia or sweet onion, cut into rings
½ cup white vinegar
½ cup water
⅓ cup olive oil
3 tablespoons granulated sugar
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper

This light cucumber and tomato salad in a bowl tastes like summertime. The dressing turns out to be light and savory thanks to the addition of vinegar, cucumbers and onions are so pleasantly crispy that it is impossible to tear yourself away from them, and tomatoes are so juicy and sweet that they burst in your mouth. It's perfect as a light summer snack, but it's also a great side dish for any barbecue or picnic, or even an addition to other salads. Make a large container out of this and store it in the refrigerator. It will instantly disappear.
Place the cucumbers, tomatoes, and onions in a large bowl; set aside.Whisk together the vinegar, water, olive oil, sugar, salt, and pepper in a medium bowl until the sugar and salt are dissolved. Pour the dressing over the cucumber mixture; stir to coat.Cover and refrigerate for at least 1 1/2 to 2 hours.
