Marinated Green Beans and Tomatoes with Dill

Ingredients
3 pounds fresh green beans, chopped
¼ cup coarsely chopped fresh dill or 1 teaspoon dried dill weed
1 large garlic clove, finely chopped
1 ½ teaspoons salt
½ teaspoon freshly ground pepper
¼ cup extra-virgin olive oil
1 ½ pounds tomatoes (about 3 large), peeled, cored, and seeded, and cut into 1/2-inch chunks
½ small red onion, thinly sliced
3 tablespoons fresh lemon juice
To make
Prepare this recipe for the day ahead, so that the beans absorb the flavor of the marinade. Preparation: 30 minutes; Cook: 10 minutes.
Cook the beans, covered, in a large saucepan of lightly salted boiling water over high heat for 10 minutes or until tender and crisp.Place the dill and the following 3 ingredients in a large, heat-resistant glass bowl. Dry the beans well and add to the dill mixture. Add the olive oil and mix well. Add tomatoes and onions and mix gently. Cover and refrigerate for 24 hours.Remove the beans from the refrigerator and let stand, covered, at room temperature for 1 hour. Add 2 tablespoons of lemon juice and mix gently. Taste for seasoning and add the remaining lemon juice if desired.
