Marinated Salmon with Mango-Kiwi Relish

Ingredients
Salmon:
1 tablespoon honey
2 teaspoons low-sodium soy sauce
1 teaspoon olive oil
¼ teaspoon black pepper
4 salmon fillets (6 oz each) (about 1 inch thick)
Cooking Spray
Sauce:
½ cup diced peeled mango
½ cup peeled kiwis, diced
¼ cup chopped fresh cilantro
¼ cup fresh orange juice
To make
Marinate salmon fillets in a homemade mixture of honey, soy sauce and olive oil, roast in a grill pan or saucepan, and serve with a homemade fruit sauce for a light first course of tropical salmon. Combine with a mixture of herbs and steamed couscous for a full meal.
To prepare the salmon, combine the first 4 ingredients in a large zippered plastic bag. Put the fish in the bag, close it. Marinate for 10 minutes, turning occasionally.While the fish is marinating, preheat a grill pan or large nonstick skillet over medium-high heat. Remove the fish from the bag, discarding the marinade. Brush the mold with cooking spray. Add the fish and cook for 5 minutes on each side, or until the fish flakes easily when pricked with a fork.While the fish is cooking, prepare the seasoning. Combine mango and other ingredients. Serve with fish.
