Mashed Potatoes

Ingredients
5 large potatoes (about 2 1/2 pounds), peeled, quartered, and boiled
½ cup low-fat milk, warmed
2 tablespoons butter or margarine
1 teaspoon salt
⅛ a teaspoon of ground black pepper
To make
Fill the bowl of a mixer and a flat beater with hot water; dry. Place the hot potatoes in a bowl. Connect the bowl and flat beater to the KitchenAid®mixer. Gradually switch to speed 2 and mix until smooth, about 1 minute. Add all the other ingredients. Turn on speed 4 and beat until the milk is absorbed, about 30 seconds. Gradually switch to speed 6 and beat until fluffy, about 1 minute. Stop and clean the bowl. Replace the flat beater with a wire beater. Turn on speed 10 and beat for 2-3 minutes. Mashed potatoes with garlic: Replace the salt with 1 teaspoon of garlic salt. Mashed potatoes with parmesan cheese: Increase the amount of milk to 3/4 cup. Add 1/3 cup grated parmesan cheese and milk. Sour cream and green onion mashed potatoes: Replace 1/4 cup of milk with low-fat sour cream. Add 2 tablespoons chopped fresh green onions.
