Mashed Sweet Potatoes with Pineapple

Ingredients
3 large sweet potatoes (about 3 1/2 pounds)
1 cup grated carrot
1 cup fresh orange juice (from about 2 oranges)
⅛ a teaspoon of ground ginger
2 tablespoons butter or margarine
½ teaspoon salt
1 can shredded pineapple (15 1/4-ounce cans) in juice, drained
To make
Preheat the oven to 350 degrees.Place the sweet potatoes on a baking sheet. Bake at 350 degrees for 1 hour and 25 minutes, or until the potatoes are tender. Cool slightly; peel.Combine the carrots, orange juice, and ginger in a small saucepan. Bring to a boil; reduce heat and simmer for 15 minutes. Tip the carrot mixture into a colander over the bowl, reserving 3/4 cup of the cooking liquid. Combine the potato and carrot mixture and mash. Add 3/4 cup cooking liquid, butter, salt, and pineapple.
