Mediterranean Orzo Salad with Feta Vinaigrette

Ingredients
1 cup raw orzo (rice-shaped pasta; about 8 ounces)
2 cups pre-washed spinach, chopped
½ cup sliced halved sun-dried tomatoes, sauteed in butter
3 tablespoons chopped red onion
3 tablespoons chopped pitted kalamata olives
½ teaspoon freshly ground black pepper
¼ teaspoon salt
1 can pickled artichoke hearts, skinless (6 oz)
¾ cup (3 oz) shredded feta cheese
To make
Prepare a colorful salad for a Mediterranean-style dinner in less than 30 minutes. Add some artichoke marinade to the vinaigrette to enhance the flavor and save time.
Prepare the orzo according to the instructions on the package, without adding salt or fat. Drain; rinse with cold water. Combine the orzo, spinach, and the following 5 ingredients (season with salt) in a large bowl.Drain the artichokes, reserving the marinade. Coarsely chop the artichokes and add the artichokes, remaining marinade and 1/2 cup feta cheese to the orzo mixture, stirring gently to coat. Sprinkle each serving with the remaining feta cheese.
