Ingredients

Sauce:
⅔ cup diced cucumber

¼ teaspoon dried dill
2 minced garlic cloves
Salmon patties:
1 can red salmon (14.75 oz), dried
1 can of chickpeas (15-ounce garbanzo beans), dried
1 cup fresh breadcrumbs (approximately 2 slices (1 oz each))
¼ cup sliced ripe olives
½ cup chopped fresh parsley
2 tablespoons lime juice
1 teaspoon hot sauce
½ teaspoon ground cumin
¼ teaspoon salt
2 large egg whites, lightly beaten
1 tablespoon vegetable oil, divided

To make

Add a Mediterranean flavor to your table with these healthy salmon patties topped with fresh cucumber sauce. Add more hot sauce to your taste to make the cutlet more spicy.
To make the sauce, combine the cucumber, yogurt, dill, and garlic in a small bowl.To make salmon patties, remove the bones and skin from the salmon. Place the chickpeas in a medium bowl; mash the chickpeas partially with a fork. Add the salmon, breadcrumbs and olives. Combine the parsley and the following 5 ingredients (parsley and egg whites) in a small bowl; toss with the salmon mixture. Divide the mixture into 12 equal portions, forming each into a 3/4-inch thick patty.Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add 6 patties; cook for 4 minutes. Carefully turn the patties over and cook for 4 minutes or until golden brown. Repeat with 1 1/2 teaspoons of butter and the remaining cutlets. Serve with the sauce.
