Ingredients

1 ½ cups chopped tomatoes, unseeded
1 cup finely chopped zucchini
½ cup finely chopped toasted bell pepper
2 tablespoons finely chopped red onion
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh flat-leaved parsley
2 teaspoons fresh lemon juice
2 teaspoons extra virgin olive oil
1 ½ teaspoons capers
¼ teaspoon salt
⅛ a teaspoon of black pepper
1 clove garlic, minced

To make

You can serve it as a side dish or as an appetizer on top of toasted baguette slices. In this recipe, you can use any kind of sweet baked bell pepper.
Combine all the ingredients in a large bowl.Note: Keep the salsa in the refrigerator for up to 2 days.
