Melon and Crispy Prosciutto Salad

Ingredients
1 pack prosciutto (4 oz)
6 tablespoons chopped fresh mint
4 tablespoons olive oil
3 tablespoons white wine vinegar
3 tablespoons honey
¾ teaspoon kosher salt
½ teaspoon freshly ground pepper
10 cups chopped greens (such as arugula)
½ melon, peeled, seeded and coarsely chopped (approximately 6 cups)
1 (4 oz) pack of shredded feta cheese
½ cup coarsely chopped pistachios

The base of this sweet, salty and crunchy salad can be made from any melon.
Place half of the prosciutto on a paper towel-lined microwave dish; cover with a paper towel. Reheat in the microwave on high power for 2 minutes or until crisp. Repeat with the remaining prosciutto. Break the prosciutto into large pieces.Whisk together the mint and the following 5 ingredients.Combine the herbs and sliced melon with the vinaigrette, and top with the cooked prosciutto, crumbled feta cheese, and chopped pistachios.
