Ingredients

4 casserole potatoes (6 oz each), peeled and cut into 1-inch thick slices
½ cup low-fat sour cream
½ cup 1% low-fat milk
2 tablespoons chopped fresh green onions
½ teaspoon salt
½ teaspoon freshly ground black pepper

Place the potato slices in a large, microwave-safe bowl. Cover the bowl with plastic wrap; make a 1-inch-thick cut in the center of the plastic wrap. Cook in the microwave on high power for 10 minutes. Let stand for 2 minutes. Add sour cream and other ingredients to the bowl; mash with a potato masher.SOUTHWEST OPTION: Do not add sour cream and green onions; reduce the amount of milk to 2 tablespoons and salt to 1/4 teaspoon. Add 3/4 cup plain low-fat yogurt; 1 tablespoon chopped chipotle chili preserved in adobo sauce; and 1/4 teaspoon ground cumin. Yield: 4 servings (serving size: about 1 cup).
