Miso Soup with Tofu and Nori

Ingredients

⅔ cup of red miso*
2 cups frozen edamame
14 ounces solid tofu, cut into 1/2-inch pieces. cubes
1 ½ teaspoons soy sauce
1 nori leaf, halved and sliced
2 green onions, sliced diagonally

To make

Classic. Simply. Tasty. Nothing beats a plate of delicious miso soup, and this recipe is sure to become one of your favorites on rainy days. We used edamame and tofu, but you can replace them with boiled meat and almost any vegetables you have on hand.
In a medium saucepan, bring 6 cups of water to a boil. Reduce the heat to a simmer and add the miso. Whisk well. Add the edamame and cook for 2 minutes.Remove from heat and add tofu and soy sauce. Let it sit for 3 minutes to warm up.Arrange on plates and top with a few strips of nori and green onions.* Miso can be found in the chilled food section of the market.Note: The nutritional analysis is given for a 2-cup serving.
