Mixed Berry Crepes

Ingredients
1 ½ cups frozen unsweetened raspberries, defrosted
1 ½ cups frozen unsweetened blueberries, defrosted
1 cup sliced frozen unsweetened strawberries, defrosted
¼ cup granulated sugar
1 teaspoon cornstarch
1 tablespoon fresh lemon juice
6 tablespoons 1/3 lower-fat softened cream cheese
12 pancakes prepared in advance
1 tablespoon powdered sugar (optional)
To make
Frozen berries make these sweet crepes a year-round treat, not just a seasonal waste. Prepare the filling and put it in the refrigerator for a day ahead.
Combine the first 5 ingredients in a saucepan; bring to a boil. Reduce heat; simmer 5 minutes or until thickened. Remove from heat; add juice. Cool.Spread 1 1/2 teaspoons cream cheese on each finished pancake and sprinkle each with about 2 1/2 tablespoons berry mixture; roll up. Sprinkle each pancake with about 2 tablespoons of the berry mixture. If desired, sprinkle the pancakes evenly with powdered sugar before serving.
