Mixed Lettuce, Pear, and Goat Cheese Salad with Citrus Dressing

Ingredients
Refill:
1 tablespoon finely chopped shallots
1 teaspoon dijon mustard
¼ cup fresh orange juice
4 teaspoons fresh meyer lemon juice
¼ teaspoon kosher salt
⅛ a teaspoon of freshly ground black pepper
4 teaspoons extra virgin olive oil
Salad:
2 tablespoons fresh orange juice
2 hard, ripe Bosk pears, peeled and thinly sliced
6 cups baby lettuce
1 torn head of Boston or cream lettuce (about 2 cups)
¾ cup (3 oz) shredded goat's cheese
To make
If you can't find Meyer lemons, use regular lemon juice and add a pinch of sugar to give them roughly the same flavor.
To make the dressing, combine the shallots and mustard in a medium bowl, stirring with a whisk. Add 1/4 cup orange juice and the following 3 ingredients (season with pepper). Gradually add the butter, stirring constantly with a whisk.To make the salad, combine 2 tablespoons of orange juice and pears, toss to coat. Combine the lettuce leaves in a large bowl. Drizzle with the dressing; stir gently to coat. Place approximately 1 cup of the salad mixture on each of the 8 salad plates. Sprinkle each serving with about 1/4 cup of pears and 1 1/2 tablespoons of cheese.
