Mushroom and Goat Cheese Bruschetta


¼ cup olive oil
1 small shallot, minced
1 clove garlic, minced
10 oz fresh mushrooms, trimmed, coarsely chopped
Salt and pepper
2 tablespoons chopped fresh parsley
2 teaspoons lemon juice
16 slices of French or Italian bread, cut on a diagonal about 1/2-inch thick
6 oz soft goat cheese, room temperature

To make

Sprinkle the bread with goat cheese and a fragrant mushroom mixture to make a delicious snack.
Preheat the oven to 375°F. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Saute the shallots until softened, about 3 minutes. Add garlic; simmer for 30 seconds. Add the mushrooms, season with salt and pepper, and turn up the heat to high. Cook, stirring occasionally, until the mushrooms are soft and most of the liquid has evaporated, about 7 minutes. Remove from heat; add parsley and lemon juice. Season with salt and pepper if desired.Brush the bread on both sides with the remaining 2 tablespoons of butter; place in a single layer on a baking sheet. Bake until golden brown, 6-8 minutes, turning once. Spread goat's cheese on slices of bread and sprinkle each with a tablespoon of the heaped mushroom mixture. Serve immediately.
