Nectarine, Prosciutto, and Arugula Bundles

Ingredients
4 cups lightly chopped arugula
1 teaspoon extravirgin olive oil
⅛ a teaspoon of freshly ground black pepper
12 1/2-ounce prosciutto slices, each cut in half lengthwise
3 nectarines, each cut into 8 wedges (about 3/4 pound)
To make
Your guests will be amazed to find out how delicious these simple snacks are. Peaches or plums are also good instead of nectarines. You can prepare the bunches in about an hour. Just cover them with plastic wrap and refrigerate until ready to serve.
Combine the first 3 ingredients in a large bowl; mix gently. Arrange 3 or 4 arugula leaves on 1 end of 1 prosciutto strip. Place 1 nectarine slice on top of arugula; roll up. Place the bunch seam side down on a serving platter. Repeat with the remaining arugula, prosciutto and nectarines.
