No-Potato Cauliflower Hash Browns Are Your Favorite New Breakfast Side

Ingredients

½ cup cauliflower head
1 tablespoon egg
¼ tablespoon mixed cheese
3 teaspoons chopped onion
1 teaspoon chopped green onion
¼ tablespoon garlic powder
¼ cup of salt
2 ⅛ teaspoons black pepper
for frying, use coconut oil or butter with Land O Lakes salt

To make

You've tried cauliflower grits and cauliflower rice, but have you tried cauliflower fritters? P.S. A: You can make 100% potato pancakes without potatoes. Until I made these pancakes without potatoes, I just assumed that potatoes were the only option, but believe me, cauliflower does somehow magically reflect the taste and texture of potatoes. I promise this isn't one of those typical healthy, disgusted breakfasts that you always view on Pinterest. If you don't make these healthy pancakes, you're fooling yourself out of sheer pleasure. (I fed them to my mom, who despises any healthy alternatives, and she couldn't tell cauliflower from potatoes. She. Was. In shock.) While these potato-free fritters have less carbs than the original, the crisp, golden-brown sides you love remain the same — and that's probably the best part about breakfast fritters. Use these burgers as the base for Benny's scrambled eggs, serve with omelets, or just eat them as is with ketchup and sour cream.Potato pancakes with cauliflower
Using a medium-bore grater, grate half a head of cauliflower in a small mixing bowl to make the cauliflower rice. If you want to wash another dish, here's a shortened version: Chop half the cauliflower in a food processor.Pat and press down the cauliflower rice with dry paper towels to squeeze out any excess moisture. If you skip this step, there is a small chance that your pancakes will turn out raw and brittle.Break the egg into a baking dish, whisk to combine the whites and yolks, and add to the cauliflower rice. Add the cheese and chopped onion; toss to combine. Season with garlic powder, salt and black pepper and mix again.Melt 2 tablespoons coconut oil or butter Land O'Lakes in a cast-iron skillet over medium-high heat.Form 10-12 round patties, pressing them tightly together with your hands. At the same time, put only three pancakes with potatoes in the pan. Cook for 5 minutes on each side or until golden brown.Serve hot, with a generous drizzle of yogurt, sour cream, applesauce, ketchup, or whatever your heart desires.
