North African Lamb Stew

Ingredients

Cooking Spray
1 (1 lb) leg of boneless lamb, baked, trimmed and cut into 1/2-inch thick cubes
½ teaspoon kosher salt, divided
1 ½ cups chopped onion
1 teaspoon ground cumin
½ teaspoon ground cinnamon
½ teaspoon ground red pepper flakes
6 garlic cloves, coarsely chopped
2 tablespoons honey
1 tablespoon tomato paste
½ cup dried apricots, cut into quarters
1 can low-sodium, fat-free beef broth (14 ounces)

To make


Preheat a roasting pan over medium-high heat. Brush the mold with cooking spray. Sprinkle 1/4 teaspoon salt evenly over the lamb. Add the lamb to the skillet; simmer for 4 minutes, until browned on all sides. Remove from the pan. Add the onion; simmer for 4 minutes, stirring frequently. Add the remaining 1/4 teaspoon salt, cumin, and the next 3 ingredients (via garlic); simmer for 1 minute, stirring constantly. Add the honey and tomato paste; cook for 30 seconds, stirring frequently. Return the lamb to the pan. Add apricots and stock; bring to a boil. Cover, reduce the heat and simmer for 1 hour or until the lamb is tender, stirring occasionally.
