Nutty Edamame Spread

Ingredients
2 cups frozen inshell edamame
2 peeled garlic cloves
½ cup fresh basil leaves, packed
2 tablespoons toasted pine nuts
2 tablespoons plain 2% low-fat Greek yogurt
¼ cup water
2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
¾ teaspoon kosher salt
½ teaspoon grated lemon zest
¼ teaspoon freshly ground black pepper
To make
It is delicious to serve with crudits, spread on whole-grain bread or stuffed in mini-sweet bell peppers. For a beautiful effect, you can decorate with lemon zest.
Combine the edamame and garlic in a small saucepan; cover with water 2 inches above the edamame level. Bring to a boil; cook for 2 minutes or until the edamame is tender. Remove from heat; strain well.Combine the edamame, garlic, basil, pine nuts, and yogurt in a food processor; beat 10 times or until smooth. Add 1/4 cup water and the rest of the ingredients; beat until almost smooth.
