Ohio Buckeyes

Ingredients

2 cups powdered sugar
6 tablespoons softened unsalted butter
2 ounces softened cream cheese, 1/3 lower in fat
½ teaspoon kosher salt
1 ½ cups low-fat peanut butter
¼ cup graham cracker crumbs
8 ounces chopped dark chocolate (60-65% cocoa)

To make

This classic Buckeye State confection combines creamy peanut butter and chocolate to create a delicious replica of an Ohio tree nut.
Place the first 4 ingredients (with added salt) in a medium bowl; beat with a mixer on medium speed until creamy. Add the peanut butter and Graham cracker crumbs; beat until smooth.Line a baking sheet with parchment paper. Form 38 balls from the peanut butter mixture in tablespoons. Place the balls on a baking sheet; refrigerate for 1 hour.Put the chocolate in a double boiler; put it on boiling water, stirring, until it almost melts. Remove from heat; stir until smooth. Allow to cool slightly.Prick each ball with a fork and dip in the chocolate until partially covered; return to parchment paper to set.
