Old-Fashioned Chicken Noodle Soup

Ingredients
8 cups chicken stock or low-sodium, fat-free chicken stock
2 skinless and boneless chicken thighs (4 oz each)
1 half skinless and boneless chicken breast (12 oz.)
2 cups carrots, sliced diagonally
2 cups celery, sliced diagonally
1 cup chopped onion
6 ounces medium-sized raw egg noodles
½ teaspoon kosher salt
½ teaspoon black pepper
Celery leaves (optional)

Old-fashioned chicken noodle soup is a classic dish of American cuisine. However, does this make it any better? Aromatic broth, freshly prepared chicken, traditional vegetables and egg noodles add a starchy consistency to the broth of this favorite soup, which is ready in just an hour. If you don't have a roaster, you can prepare the dish in a large roasting pan or in a soup pot (slow cooker). This recipe can easily be doubled so that you can try it now, and freeze the leftovers for quick cooking during busy weekdays.
Combine the first 3 ingredients in a roasting pan over medium-high heat; bring to a boil. Reduce heat; simmer 20 minutes. Remove the chicken from the pan; let stand for 10 minutes. Remove the bones from the chicken and cut the meat into small pieces. Remove the bones.Add the carrots, celery and onion to the pan; cover and simmer for 10 minutes. Add the noodles and simmer for 6 minutes. Add the chicken, salt and black pepper; cook for 2 minutes or until the noodles are cooked through. Garnish with celery leaves if desired.
