½ teaspoon salt
6 tablespoons cold unsalted butter, sliced
½ cup dried currants
⅔ a cup of heavy cream, plus
1 tablespoon for filling
2 egg yolks

Preheat the oven to 400 ° F and line a baking sheet with parchment paper or drizzle with cooking spray.In a large bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt. Knead the butter with your fingertips or a baking dish until the mixture looks like a large crumb. Add the currants.In a small bowl, whisk together 2/3 cup cream and egg yolks; use a fork to stir in the flour mixture until the dough rolls into a ball. Knead the dough in a bowl three times so that it is well mixed; do not overdo it. On a lightly floured surface, roll out the dough into a 3/4-inch thick circle. Using a 2 1/2-to 3-inch cookie cutter, cut out 5 buns and transfer to the prepared baking tray. Shape the scraps and cut 2 more buns. Brush the buns with the remaining 1 tbsp. l. whisk the cream and sprinkle with the remaining 1 tbsp. l. sprinkle with sugar.Bake the buns until golden brown, 15 to 20 minutes. Allow to cool for 10 minutes before use.
