Orzo Salad with Spicy Buttermilk Dressing

1 cup raw orzo
1 cup frozen whole grain corn, thawed and dried
12 cherry tomatoes, cut into quarters
3 chopped green onions
1 can black beans (15 oz), washed and dried
¼ cup low-fat buttermilk
3 tablespoons chopped fresh cilantro, divided
3 tablespoons fresh lime juice
2 tablespoons light sour cream
2 tablespoons canola mayonnaise
1 teaspoon chili powder
½ teaspoon kosher salt
¼ teaspoon ground black pepper
¼ teaspoon ground red pepper flakes
2 minced garlic cloves
1 peeled avocado, cut into 8 slices
1 tablespoon chopped fresh parsley

This delicious and colorful Orzo salad gets its piquancy thanks to a buttermilk dressing that includes ground chili pepper and red ground pepper.
Prepare the orzo according to the instructions on the package, without adding salt or fat. Drain and rinse thoroughly. Place the orzo, corn, and the next 3 ingredients (via the beans) in a large bowl; toss to combine.Combine the buttermilk, 2 tablespoons of cilantro, and the following 8 ingredients (with garlic added)in a small bowl, mixing well with a whisk. Pour over the orzo mixture; toss to combine. Top with avocado; garnish with remaining cilantro and parsley.
