Pan-fried Okra, Onion, and Tomatoes


2 pounds fresh okra
½ cup vegetable oil
1 medium-sized red onion, thinly sliced
2 large tomatoes, peeled and thinly sliced
2 tablespoons lime juice
1 ½ teaspoons salt
1 ½ teaspoons black pepper
1 teaspoon chicken stock pellets

To make

Tender okra pods, savory red onions and juicy tomatoes combine in this light and healthy southern-style roast.
Cut okra lengthwise in half.Pour 1/4 cup oil into a large skillet over medium-high heat. Saute okra in preheated oil in batches of 6 minutes or until lightly browned, turning occasionally. Remove from the pan and pat dry with paper towels. Repeat with the remaining okra, adding the remaining 1/4 cup butter as needed. Cool.Combine the onion and the next 5 ingredients in a large bowl; add the okra, stirring to coat. Serve at room temperature.
