Ginger and red bell pepper add a zesty, fresh flavor to this Asian-inspired dish. Make a quick side dish by reheating pre-cooked jasmine rice in the microwave and sprinkling it with fresh crushed mint.
Combine the first 4 ingredients; brush with the fillet mixture.Preheat a large nonstick skillet over medium-high heat. Brush the mold with cooking spray. Add the fillets; cook for 6-7 minutes on each side, or until the fillets begin to peel off easily when pricked with a fork. Serve with sweet ginger.
